Cool Off With These Summer Treats!

As the weather is getting warmer, kids want their snacks to get cooler…literally! As the summer months roll in, try these fun recipes that will cool off your kids when the sun comes up!

Homemade Ice Cream:

What You’ll Need:

  • 1 tablespoon sugar
  • 1/2 cup milk or half & half
  • 1/4 teaspoon vanilla
  • 6 tablespoons rock salt
  • 1 pint-size plastic food storage bag (e.g., Ziploc)
  • 1 gallon-size plastic food storage bag
  • Ice cubes

What to Do:

  1. Fill the large bag halfway with ice and add the rock salt. Seal the bag.
  2. Put milk, vanilla, and sugar into the small bag, and seal that.
  3. Put the small bag inside the big one, and then seal it again carefully.
  4. Shake the bags for about 5 minutes and watch as the mixture turns to ice cream!
  5. Open the bag carefully and enjoy!

Lemon Ice

What You’ll Need:

  • 3-4 lemons
  • 3 cups of water
  • ¾ cups sugar

What to Do:

  1. Wash the lemons and show your kids how to grate the peel of 2 of the lemons.
  2. Combine the lemon zest, water, and sugar in a medium saucepan.
  3. Bring the liquid to a simmer and continue simmering it, stirring occasionally, until the sugar has dissolved (about 3 minutes).
  4. Remove the pan from the heat and let the mixture cool.
  5. Pour the cooled liquid through a mesh strainer into a medium mixing bowl and throw away the zest left in the strainer.
  6. Cut the lemons into halves and juice enough of them to make 2/3 cup of strained lemon juice.
  7. Stir the juice into the sugar water. Then pour the mixture into a large dish. Place the baking dish in your freezer.
  8. When the mixture starts to freeze around the edge, stir and mash it with a fork to break up the ice. Repeat this periodically until the ice is firm. Frozen lemonade anyone??

Gummy Worms!

What You’ll Need:

  • 2 small packages sugar free jello
  • 4 envelopes plain gelatin
  • 1/2 cup water
  • Worm shaped molds

What to Do:

  1. Combine all the ingredients in a pan
  2. Heat over medium heat until dissolved
  3. Pour into molds
  4. Cool for twenty minutes

Frozen Fruit Bars

What You’ll Need

  • 2 cups of summer fruit (pineapple, oranges, cherries, blueberries and strawberries work great)
  • 1 tsp. sugar (optional)
  • 1 tsp. lemon juice

What to Do:

  1. Puree fruit in blender, adding a teaspoon or two of water if necessary
  2. Add sugar (if desired), lemon juice and blend
  3. Pour into bar molds or small cups and insert popsicle sticks
  4. Freeze until solid and enjoy!

Watermelon Honeydew Kabobs

What You’ll Need:

  • 2-3 pound honeydew melon, halved, seeded
  • 1 small seedless watermelon, cut into 3/4-inch-thick slices
  • 24 6-inch bamboo skewers

What to Do:

  1. Using large melon-baller, scoop out 72 balls of honeydew
  2. Using 1 1/4-inch round fluted cookie cutter, cut out 48 rounds from watermelon slices
  3. Alternate 3 honeydew balls and 2 watermelon rounds on each skewer
